Are they able to include a test for SARS-CoV-1 (ca 2003)? (i.e., if not an active infection, to see if the individual ever had SARS-1)

Nope. no demand for that.

Agree. Just a personal curiosity to know whether having had SARS-1 and recovered provides lasting immunity against COVID-19. Probably not important, unless SARS-1 was also developed in a laboratory... in which case we're looking at a very patient, diabolical perpetrator.
